Strawberry Shortcut cake

 

Generously grease bottom only of 9 x 13” baking pan.  Then sprinkle one-cup of miniature marshmallows evenly over the bottom of the baking pan and set aside.

 

In a large bowl combine two-ten ounce packages of frozen sliced strawberries and syrup and one-package (3 oz) of strawberry flavored gelatin.   Set aside also.

 

In a large mixing bowl combine the following ingredients:

 

2 ¼ cups of all-purpose flour

1 ½ cup of sugar

½ cup of solid shortening

3 teaspoons of baking powder

½ teaspoon of salt

1 cup of milk

1 teaspoon of vanilla

3 eggs

 

Blend on low speed until moistened then beat three minutes on medium speed, scraping the sides of the bowl (occasionally).   Pour batter over marshmallows and spoon the strawberry mixture over the top of batter.

 

Bake at 350° for 45 to 50 minutes until golden brown (a tooth pick inserted into the center comes out clean).

 

If desired server with whipped topping, whipped cream or ice cream.
